Directions

  1. Bring a large pot of water to a boil
  2. Season generously with salt, add orzo, and cook according to package instructions

  • 2 eggplants
  • 1 cup almonds, grounded
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic
  • Non-stick olive oil spray or 2 teaspoons of olive oil

Directions

  1. Preheat oven to 425 degrees F.
  2. On a greased cookie sheet, slice and place eggplant slices down and sprinkle with 1 teaspoon of salt. This will help to remove the moisture allow it to crisp up more while baking. Allow to sit for 10 minutes.
  3. In a food processor, ground the almonds, remaining salt, pepper and garlic until finer but still slightly coarse texture.
  4. After eggplants have rested for 10 minutes, spray with non-stick olive oil, or coat with olive oil on each side and coat sides in almond mix and place back on cookie sheet
  5. Bake for 30 minutes, 15 minutes on each side, until crisp.
  6. Serve with marinara sauce on top or by dipping it in there.

  4. Transfer fried eggplant to a paper towel-lined half sheet pan and sprinkle with salt 
  5. Repeat with remaining eggplant, topping up oil as needed
  6. In a 6-cup baking dish, arrange a layer of eggplant slices 
  7. Top with a thin layer of tomato sauce, followed by shredded mozzarella and oregano leaves
  8. Continue layering eggplant, sauce, cheese, and herbs to fill baking dish
  9. Do not add oregano to the top layer
  10. Bake eggplant parmesan until bubbling and browned on top, about 20 minutes
  11. Let stand for 10 minutes to reabsorb juices

  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons freshly minced garlic (about 2 medium cloves)
  • 1/4 teaspoon crushed red pepper flakes
  • 1 (28 ounces) can crushed tomatoes
  • 3 tablespoons finely chopped fresh basil
  • Kosher salt and freshly ground black pepper
  • 1 cup whole milk ricotta cheese
  • 1 cup grated fresh mozzarella, divided
  • 1/3 cup grated sharp provolone
  • 2/3 cup finely grated Parmigiano-Reggiano cheese, divided
  • 1 large egg
  • 1/4 cup finely chopped fresh basil, plus more for garnish
  • 2 large eggplants, ends trimmed and cut lengthwise into 1/4-inch slices
  • 1/3 cup extra-virgin olive oil
  • Kosher salt and freshly ground black pepper

Directions

  1. Place oil, garlic, and red pepper flakes in a medium saucepan over medium heat
  2. Cook until fragrant and bubbles start to form around garlic, 30-60 seconds
  3. Stir in crushed tomatoes and bring to a boil
  4. Reduce heat to low and simmer until slightly thickened, about 20 minutes
  5. Remove from heat and stir in basil

  21. Place on cool side of the grill, cover with aluminum foil, and let cook until cheese has melted, about 15 minutes
  22. Remove from grill, garnish with additional basil, and serve

Ah, the most common misconception about losing weight. Can you actually lose weight if you eat a lot, as long as you eat more? After all, as long as the calorie burnt exceed your calorie intake, we will lose weight, right?

Sadly, the math is not that simple. To shed just a pound of fat, you will need to burn, give or take,  3,500 calories more than your intake. It is incredibly hard, if not impossible.

You have to keep both a healthy diet and a healthy workout regime to succeed with your weight loss plan. If any, a healthy diet without workout will benefit you more.
